When a recipe calls for water, the original recipe may have called for:
- water
- milk (cow, goat, almond or oat substitutes, etc.)
- broth (chicken, vegetable, etc.)
You can substitute as appropriate for the specific recipe, such as milk instead of water in pancakes, or broth instead of water in chicken pot pie.
I use flour whisked into cold water as a substitute for milk or cream to thicken sauces and broths.
I always use regular olive oil for cooking & baking (NOT extra virgin which isn’t great for high heat). You can use other oils, just check the smoke point (higher is better).
Most of the time oil can be substituted for butter; many of these recipes originally called for butter.
Semi-sweet chocolate chips are my favorite, but you can use other types.
Chocolate chips can be left out entirely or substituted with nuts or whatever else you want.
