Peanut Butter Chocolate Cookies

Based loosely on Chocolate Brownie Cookies from the Cookies! A Cookie Lover’s Collection ©1994 Cy DeCosse Incorporated.

Makes roughly 12-30 cookies depending on size. You can make them into 1 inch balls or multiple inches wide piles. Very crumbly and delicious any time, especially warm out of the oven.

Mix in this order:
1/4 cup oil
1/2 cup sugar
1/4 cup water
1/3 cup cocoa powder
1/4 cup peanut butter
1/2 tsp vanilla
1 cup flour
3/4 tsp baking soda
1/4 tsp salt

Bake at 350°F for 9 minutes.

Peanut Butter Cups

Based on Taste of Home’s Homemade Peanut Butter Cups.

These are addictive. I do them in a silicone mini muffin tin so that they are easier to get out and don’t result in accidentally eating paper. You can also do them in any muffin tray or cupcake liner, or on any movable flat surface (such as parchment paper on a baking sheet or plate) that will fit in your refrigerator or freezer.

Ingredients

  • 1 cup creamy peanut butter, divided
  • 1/2 cup confectioners’ sugar (aka powdered sugar)
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips

Directions

  • In one bowl, mix until smooth:
    • 1/2 cup peanut butter
    • 1/2 cup confectioners’ sugar
    • 1/2 teaspoon salt
  • In a separate bowl, melt chocolate and 1/2 cup peanut butter
    • microwaving works well
    • stir until smooth
  • Put chocolate mixture into muffin tray or onto flat surface
  • Drop some peanut butter mixture into each cup
    • top with more chocolate mixture
  • Refrigerate or freeze until set

Oat Muffins

Based on Easy Oatmeal Muffins from Allrecipes.

I recommend chocolate chips, but you can use any additions you want. Make as mini or full sized muffins, both are delicious.

Silicone muffin tins make getting muffins out much easier, but are more annoying to clean. You could also use paper muffin liners/cupcake cups, or grease (with oil, butter, or a cooking non-stick spray).

Ingredients
1 cup water
1 cup quick cooking oats
1 egg
1/4 cup oil
1 cup all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chocolate chips, nuts or other addition (optional)

Directions
In a small bowl, combine water and oats; let soak for ~15 minutes.
Add the egg and oil, beating them together before stirring into the mixture.
Stir in the flour, sugar, baking powder, and salt until just combined – don’t over-mix.
Spoon batter into prepared muffin cups until cups are 2/3 full.
Bake at 425°F (220°C) for 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Ingredients Halved
1/3 cup water
1/2 cup quick cooking oats
1 egg
1/8 cup oil
1/2 cup all-purpose flour
1/8 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/8 cup chocolate chips, nuts or other addition (optional)

Chocolate Cake Batter

I think this is much better as raw batter than baked cake. Therefore, the recipe is quartered – closer to a single or double sized snack than a whole cake.

However, flour is a raw ingredient which if contaminated could make you sick, so eat at your own risk.

Based on the Chocolate Olive Oil Cake recipe from Smitten Kitchen. Head there for the full recipe, glaze, and baking directions.

Add together:

  • 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 5 teaspoons unsweetened cocoa powder
  • 1.5/8 teaspoon baking soda
  • 1⁄8 teaspoon kosher salt

Mix until uniform in color.

Then add:

  • 1/4 cup water
  • 4 teaspoons olive oil
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon white vinegar

Slowly blend, then mix until the mixture is smooth and uniform.

Chocolate Chip Cookies

Based on the Original Nestlé Toll House Chocolate Chip Cookies recipe.

Using oil instead of butter and halved.

1/2 cup oil
1/4 cup granulated sugar
1/2 cup brown sugar
1/2 tsp vanilla extract
1 egg
1 1/8 cup flour
1/2 tsp baking soda
1/2 tsp salt

1/3 cup chocolate chips and/or nuts

  1. Mix oil and sugar.
  2. Mix in egg and vanilla.
  3. Add flour, baking soda, and salt.
  4. When blended, add chocolate chips and/or nuts as desired.

Bake at 375°F (190°C) for ~11 minutes.

Pancakes

These are great for a meal or snack at any time of day or night. Most delicious with real maple syrup.

Put in a bowl and let soak ~15 minutes before adding other ingredients:
2 cups water (or milk)
1 cup oats

Mix in:
1 cup flour
1 Tablespoon brown sugar
1 heaping teaspoon salt
1/2 heaping teaspoon cinnamon

Then mix in:
1-2 eggs

Right before cooking, add:
1 Tablespoon baking powder

Mix in chocolate chips as desired.
